With fruit in a similar style to 1999 and 2000, the 2005 vintage promises to be stellar, with overall quality on par with these vintages and 1996 and 2002. Growers compare the character of 2005 to 2003, except that the warm temperatures were not as extreme, and as a result, the fruit exhibited superior ripeness, acidity and balance. Simply put, the 2005 Chablis wines show the potential to be as good or better than the finest vintages in recent memory. Food Match: shrimp, shellfish, scallops, salmon, oysters, lobster, fish, crab, chicken, sushi.
Burghound
(from vines planted in 1933). This too evidences a touch of wood toast and
vanilla with equally fresh, bright and spicy aromas yet here the flavors are richer, denser and fuller with outstanding dry extract
that coats the mouth on the impressively long finish. This is definitely of fine 1er quality and it will age. (89-91)/2010+

from vines that are now almost 70 years old) Pure, very ripe nose hints at soft citrus fruits and peach. Rich and stuffed with soft citrus flavor; this has an old-viney reaminess of texture and impressive volume. The impression of sweetness and the glyceral quality are at least partly due to the wine's slow fermentation, notes winemaker Fabien Moreau. Already round and satisfying. All of the 2005s finished with less than 2 grams per liter of residual sugar, notes Christian Moreau, but this one is at a particularly dry 0.9. 90 points
