The 15 hectares which make up Domaine de Chamans are sheltered in the foothills of the Montagne Noire, the mountain range lining the north of the Minervois (an AOC in the Languedoc Roussillon region of France). Minervois lies north of Corbieres, and is known for producing mostly reds. Since the Minervois appellation controlee was granted in 1985, quality of the local wines has risen greatly, receiving much praise from wine critics around the world.

The 2007 Les Chamans is a blend of 35% Syrah, 35% Carignan, 20% Grenache and 10% Mourvedre offering rich, ripe fruit and great depth. Because of the vineyards' isolation, Hegarty and Crane can pursue their own non-interventionist farming philosophy, based on organic and biodynamic principles to respect the ecosystem. To avoid the detrimental effects of impacting the soil, they choose to use machines only minimally. Another fundamental part of their winemaking philosophy is non-filtration of the wines. They bottle the wine when it is stable, using the moon cycle and weather conditions to guide them. For fermentation, they use yeast native to the vineyards. All grapes are first hand harvested, and then undergo further selection on a table de tri.
