Burgundy lovers will adore this delicious "Chablis style" Chardonnay from Paso Robles! The James Berry Vineyard is an organically-farmed parcel of 30-year-old vines in Western Paso Robles. The cool coastal influence brings in fog, and helps moderate temperatures during the growing season. Naturally low-yields and careful selection of picking dates allows the team to harvest ripe Chardonnay at lower alcohols, with high acids. These conditions are ideal for producing this "Chablis-inspired" wine. The wine is thus named after two of Chablis' Grand Cru vineyards - Clos and Blanchots.

Emulating Raveneau and Dauvissat, the team at Clos Blancheau ferments the wines in stainless steel and then ages them for 12-15 months in neutral French oak. Fermentation is done with indigenous yeasts, and often takes 8-9 months to complete. Clos Blancheau is not your typical California Chardonnay - and that is the point. They believe there is an abundance of big, rich Chards out there...but very few that display a refreshing texture and minerality as well as a site specificity that is more akin to an old-world style.
