Golden yellow with hints of green. Nose is fresh, delicate, hints of lime. White flower. Palate is bold, well-balanced, good energy, dense, saline, precise.
The soil is clay-limestone, the perfect mixture to nurture those Chardonnay grapes. The grapes are, of course, hand-harvested. One of Boillot's signatures is that he keeps his yields stunningly low - between 22 and 26 hectoliters per hectare. This practice is extraordinary because it's about half the yield of his neighbors.

A marvellous entry point to the range, this has expressive aromas of ripe apple and fresh white flowers, with just a hint of spice. On the palate, the wine is fresh and surprisingly lively. Produced mostly with grapes from Auxey-Duresses and St-Romain, slowly pressed in a vertical press and fermented in cask (5% new), with most of its lees.
