No inputs during vinification, spontaneous fermentation with indigenous yeasts and no added sulfites. Practicing organic, Pauline is a 3rd generation winemaker who is truly taking her family's estate into the future.
A cuvée amounting to some 20,000 bottles produced from four hectares of the domaine's easterly exposed holdings, the 2019 Chiroubles La Grosse Pierre bursts with aromas of red berries, rose petals and spices. Medium-bodied, fine boned and lively, with powdery tannins and a vibrant core of fruit, it concludes with a saline finish.
Averaging 50-year-old vines, granite-rose soils, indigenous yeast, 12-day maceration, aged 8 months in steel & concrete, no sulfites added, no chemical inputs whatsoever, unfined/unfiltered.
