Vineyard practices are organic with cover crops planted for green manure and turned into the soil. Yields for the top wines are minuscule. Harvest is by hand with rigorous sorting though the low yield coupled with the generally dry conditions ensure that very little rot will need sorting out. The ferment begins spontaneously for maximum complexity.
