The grapes for this new wine are grown using a very labour intensive trellising system called, 'Scott Henry'. This system gives the grapes optimal exposure to light, further intensifying the varietal fruit flavours. The estate grown fruit then goes into open fermentation and is matured in French Oak. Due to the richness and intensity of the Cabernet variety of grapes, wines made as 100% Cabernet need more time to mature in oak and also in bottle. Taking this into consideration, we have waited two years to release this new wine style into the market place. This stunning wine has been rated on par with our Highbank 'Coonawarra' blend.
