Willowbrook Napa Valley Chardonnay 2018At Willowbrook, winemaker Joe Otos takes great care in ensuring that his Chardonnay echoes the traits of the Napa Valley, where the region's Mediterranean climate and geology have consistently produced such quality wines that the tiny growing region has been able to enjoy an unparalleled reputation. This chard comes from a vineyard in the southern part of Napa Valley, bordering the Carneros. Marine influences help moderate the summer daytime temperatures, providing a cooler and longer growing season than elsewhere in the valley, preserving fruit profiles and acidity while attaining full ripeness. The grapes are 100% clone 96, picked at 24.2 Brix and whole-cluster pressed. The Chardonnay is filled with delicious notes of red apple, followed by a hint of melon. When it first hits the palate, you'll notice lively acidity that's combined with flavors of peach and lemon meringue, complemented by a touch of gingerbread. Need we say more? But it continues with a finish of crisp, clean minerality, which is perfectly balanced by the oak that you know and love. Rich and oaky, but lively and food-friendly at the same time. Enjoying a Chardonnay from the famous Napa Valley can always be done without a food-partner, but this beauty pairs naturally with a white fish in a buttery sauce or a late summer harvest vegetable mix. You really can't go wrong. 100 % Chardonnay. 93 points - just wine

Willowbrook Russian River Pinot Noir 2018"Our Estate vineyard on Burnside Road makes up more than half of this wine. It is a small meter by meter vineyard planted with a mix of Dijon clones, 115 and 667, with some Pommard clone 4, Joseph Swan and Calera clones. Its rich, well-drained Goldridge soil, provides the unique flavors that make this part of the Russian River so coveted-has become known as the Sebastopol Hills region. The other major component of this Pinot comes off the Martinelli Ranch on River Road. It is 100% Dijon clone 828. This area is more on the flats next to the Russian River, more of a solid clay region, that gets much warmer than our Estate, which is why the clone 828 is ideal. It is a clone known for its lushness and ability to handle a little more warmth than other Pinot clones. Lastly, we added a small amount, 12%, of our single-vineyard Pinot from Sonoma Mountain. The vineyard, known as Kaufman Sunnyslope, is 100% Dijon clone 777. The wine from this vineyard is partially crushed, 25% is left as whole clusters which line the bottom the fermenter. The grapes are allowed to ferment naturally. The resulting wine offers amazing structure and depth that you typically do not see from the neighboring Russian River, and the Kaufman is used in this blend to add structure, depth, and layers of complexity. The wines were all aged separately in small French oak vessels, mostly using wood from the Allier, Bertrage, and Troncias regions. These acclaimed forests add a wide range of flavors, oils to this rich pinot."... Joe Otos, Winemaker Beautiful raspberry aromas, offset by decadent hints of chocolate orange and rose, introduce a precisely-balanced acidity which gives way to suggestions of forest floor and striking depth of ripe berry fruit. The silky mouthfeel is well complemented by structured, nuanced tannins. Hints of plum, cherry, and Christmas spices mingle on the finish along with vibrant flavors of cassis and vanilla, a product of the wine aging in premium French oak barrels. This is a natural food-pairing wine and we recommend doing so with lightly-spiced Indian dishes, chicken fajitas or creamy camembert, and figs.

Basil Hayden's Dark RyeThis blend explores the harmonious combination of 3 distinct liquid profiles for one memorable whiskey. It begins with Kentucky Rye, providing a firm base of spicy rye, rich oak, dried fruit and subtle molasses undertones to build on. Canadian Rye from our award-winning Alberta Distillery is skillfully layered in. This unique rye provides depth to the notes of dried fruit and a more viscous mouth feel than a traditional rye. It's then finished with a touch of California Port blended in directly to add complementary juicy, ripe fruit without muddying the existing wood notes. The end result is a whiskey full in flavor and still delicately nuanced. Basil Hayden's Dark Rye is always perfect sipped on the rocks as well as in a Boulevardier.

David Nicholson Reserve Kentucky Straight Bourbon WhiskeyIn 1843 a grocer by the name of David Nicholson started distilling his original bourbon recipe in the private back room of his St. Louis general store on North 6th Street. Unbeknownst to its forefather, a legacy was born. Half a century his recipe had been passed down for generations. Eventually, the legendary Julian “Pappy” Van Winkle and W.L. Weller handcrafted Nicholson’s iconic “43” bourbon at the Stitzel distillery. The Van Winkles owned the brand until 2000 when it was acquired by Luxco. Still possessing the outstanding character for which it earned its original popularity in 1843, the David Nicholson legacy lives on unchanged, unfettered, and unmatched. This extra-aged-ryed bourbon has a full-bodied flavor and a distinct, spicy taste.

WhistlePig Double Malt Straight Rye Whiskey 18 year oldDave Pickerell built WhistlePig in pursuit of crafting the world's finest and most interesting Rye Whiskeys. After years of devotion to patient aging and innovative blending, we've turned our attention to experiments with grain - in particular, the bygone practice of malting rye. Before industrial catalysts were introduced to increase efficiency, farmer distillers would malt a small portion of their rye harvest in order to access the grain's starch content and set off the fermentation process. Floral, earthy flavors imparted by malted rye would add nuance to the bold, peppery spice character of classic rye whiskey. To harness these flavors for our oldest expression of WhistlePig yet, we selected a whiskey distilled from 79% rye, 15% malted rye, and 6% malted barley. These grains form a harmony that spans the flavor spectrum, at once soft and floral, rich and savory, and full of spice. Its complexity is only heightened after 18 years in the barrel. Sweet and aromatic, with toasted oak, berries, and nutmeg nose. Elegant and spicy, mildly fruity, and pleasantly floral. Vanilla and oak notes appear with time. Wonderfully long, clean, and spicy finish.
Pinhook Rye Humor Cask StrengthProofed at 114, this straight rye whiskey's deep and dense aromas of dark chocolate, candied black licorice, and vanilla extract set the stage for robust flavors of raisins, tobacco, cinnamon stick, and sarsaparilla.

Yellowstone Limited Edition Kentucky Straight Bourbon Whiskey 2019Limestone Branch Distilling Co. has impressed with its limited release bourbons over the past three years. Over this time they’ve reused, and more interestingly, re-charred the same barrels each year to finish their bourbon for their limited releases. Surprisingly, this didn’t create a miss-mash of convoluted flavors but instead created a warm and potent-tasting whiskey that were some of my favorite finished whiskeys each year they were released. In 2019, they took a different approach, and according to the company, poached some of their best 9 and 12-year-old barrels to create this year’s blend. This is a straightforward blend that presents its flavors well, is easy-drinking, but also might not necessarily blow you away. It definitely leans on the darker, heavier side of the flavor wheel with its oak, chocolate, and spice. Thankfully there are veins of sweetness throughout that provide a sudden and welcomed contrast. In any other year, this year’s Yellowstone Limited Edition would probably make more of a splash. It just comes at a time when many other blends have been hitting it out of the park (Little Book Chapter 3, Lux Row Double Barrel, and Four Roses Limited Edition Small Batch). Still, that doesn’t diminish what this release does well. It delivers a nicely constructed, and gentle overall intensity bourbon that makes it a really nice sipper. Nose : Cherry, vanilla custard, oak, and light orange citrus. Warming and pleasant, with a gentle intensity. Palate : Oak, dark chocolate, burnt caramel, dark sweet fruit, and leather. It has a soft delivery with a thin mouthfeel and tastes less than its stated proof. Finish : Spice, oak, vanilla, and cinnamon. Medium length finish that is slightly dry with a slow ramp-up of heat.
Corner Creek Kentucky Straight Bourbon Whiskey 10 year oldThe enigmatic Corner Creek brand was bottled for years at a famous little family-owned distillery in Bardstown. Recently the brand moved production to the Kentucky Artisan Distillery in Crestwood production and relaunched with this new 10-year-old expression. The source is a secret, but there's no question that Corner Creek has the connections to find some seriously delicious bourbon and this new expression is leaps and bounds ahead of the previous no-age-stated Corner Creek. They've selected their choicest stocks for this product and bottled them without chill-filtration. Even at 88 proof, this bourbon exhibits great richness and texture, wonderful depth, and a believable balance. This is the sort of bourbon that appeals to the most novice drinker (due to its approachable character) but will be interesting enough to satisfy even the most jaded bourbon nut. Please note that due to the lack of filtration you'll notice some haziness in the whiskey. This is completely normal and means your bourbon is packed with flavor. K&L is the only store in California selling this exceptional offering.
Sazerac Kentucky Straight Rye Whiskey 7 year old
New Riff Distilling Kentucky Straight Bourbon Whiskey Bottled in BondThe Bottled in Bond Act of 1897 represented a watershed moment for American whiskey. For the first time, a group of Kentucky whiskey makers stood up for the quality of Bourbon, demanded an end to spurious blending and rectifying practices, and required legal protections for the best of the best. In fact, compared to international regulations governing the quality of other great aged spirits such as Scotch and Cognac, we find that America’s Bottled in Bond Act, now going on 120 years old, is no less than the highest quality standard of any country in the world. Rather than reserve Bottled In Bond for special or limited releases, it is the signature of all of our whiskey. Aside from barrel proof single barrel bottlings, ALL New Riff whiskey will be Bottled in Bond. Yet the highest quality standard in the world is not high enough for us: we are taking the standard one step further by dispensing with chill filtration to ensure that not a single molecule of flavor is sacrificed for cosmetic appearances. We are firmly grounded in Kentucky’s revered Bourbon legacy, but this is our riff. A new riff on arguably America’s greatest whiskey tradition: Bottled in Bond Without Chill Filtration.

Penfolds Grange 2012Color: Dense and imposing. Dark... RED! Nose: Unmistakably, it is what it is. In a word, Grange. (Almost) all unleashed immediately upon the first splash into the glass - exuberant, lifted, flamboyant. An aromatic 'multi-cultural' chromatogram brazenly unfolds: First, enticing barrel ferment formics and balsamics, spliced with soy, tomato puree, black olive and liquorice (Dutch?). Then, the exotics - wafts of tiramisu/mascarpone/zabaglione (Italy?), replete with freshly roasted hazelnut and ground coffee beans (Kenya?) 30 seconds later... Palate: Fresh and refined. Nervy. Red liquorice, gravy reduction flavours and black olive tapenade to the fore. And then, just so much more! Where to start? Compelling depth - weighty/voluminous/fleshy - structurally complete and even throughout. A radiant inner sheen, yet still assertive - a film encrusted with dusty, softened tannins that coat tongue. Great length. A loss of innocence, as sculptured oak (purity/clean) and a boundless array of red fruits, congeal into a darkened pool of (un)known and (un)savoury delights! Unashamedly and quite blatantly THE wine of this year's Penfolds 2016 new releases! Enough said.
Penfolds Grange 2013Color: Opaque black core, dark red rim. Nose: An aromatic assault / surge / eruption of soy, hoisin, balsamic reduction ... coiled around a core of kirsch and fresh raspberry. This propulsion is crammed with tell-tale barrel ferment, V.A. and formic Grange markers - all in balance, all respectful of fruit and oak. And yet, so 'classy' - a brightness, a sheen, a gloss, a raciness - belying both age and upbringing (élevage).
Château Smith Haut Lafitte Pessac-Léognan Gran Cru Classe 2016
Opus One Napa Valley Red 2016The Opus One 2016 is remarkably elegant and bright offering sumptuous aromas of fresh red and blue fruit, baking spices and vanilla, and a delicate fragrance of spring florals. The initial bouquet is augmented by more nuanced notes of sage, rosemary, and black olive. Juicy flavors of black cherry, blackberry and cassis flood the palate and creamy, fine-grained tannins deliver a delightfully round structure. Harmonious and lively, the flavors linger to create an enduring finish with touches of dark chocolate and espresso.
Penfolds Grange 2014Deep plush garnet throughout from core to rim. Quite simply, an unmistakable youthful 'Grange' nose. Awakened primary fruits and stylish oak interlocked and indistinguishable. As expected. Savoury, not fruity. Tastes flavours remind of slow cooked beef ragout, chicken liver game terrine. Red liquorice also apparent. Integrated oak - spicy, almost 'non-American' oak ... but it is. As it always is. A core of 100% new Quercus alba. Poised yet powerful. A balanced, tightly-knit and woven structural 'tapestry'. Not to be constrained by dimension or frame. Tannins with attitude! Nonetheless respectful. Type? Slatey tannins ... alluvial, silty (certainly not muddy!). Long and lingering - tactile impressions indistinguishably and slowly fuse/merge into an aftertaste memory. Until the next sip!

Stylistically, most closely aligned to the 1963 Grange and yet stridently extolling its personality. I can’t quite remember when or where… and probably not about wine, but recently scribed: Luxury that treads lightly!" -PETER GAGO, PENFOLDS CHIEF WINEMAKER GRANGE 2013 - "Undoubtedly will soon be universally proclaimed to be a classic 'Penfolds vintage' … and indeed over time certified a classic ‘Grange vintage’! Not unlike the 2008 Grange – á la style / weight / disposition / cellarability. Sensorially supersaturated, verging on overwhelmingly generous. Beware - superlatives abound. No matter, despite the chatter, a seriously very good drink! Indulge without guilt." - PETER GAGO, PENFOLDS CHIEF WINEMAKER
Lamborn Family Vineyards Howell Mountain Cabernet Sauvignon Vintage XIV 2016"Rich and fragrant notes of blueberry and blackberry permeate the glass, accentuated by light mocha and vanilla undertones. The palate is greeted with deeply rich blue and black fruits, a whisper of tart cherry, and superseded by a dense and chewy lingering mouthfeel from front to back. The medium toast French oak accompanies the ‘Howell Mountain dust’ and moderate silky tannins. An enchanting mountaintop Cabernet, this lavish and elegant wine well-represents the remarkable Lamborn vineyard." - Heidi Barrett, winemaker (Screaming Eagle Wine Maker ) The near-perfect 2016 growing season started early, saw ideal weather conditions throughout, and wrapped up as the Valley's first significant fall rainstorm arrived on October 14th. Thanks to a relatively steady and mild July and August, followed by a series of warm days at the end of the growing season, vineyards were able to progress to perfect ripeness. Wines from the 2016 vintage are developing beautifully and vintners are pinching themselves and smiling for the gift Mother Nature has given us: a fifth consecutive vintage of stellar quality Napa Valley wines. We hope you enjoy our 14th vintage of Howell Mountain Cabernet Sauvignon ! 100% estate grown Cabernet Sauvignon
Robert Mondavi To Kalon Vineyard Reserve Cabernet Sauvignon 2016Solid, seamless, with an incredible sense of flow, the To Kalon Cabernet Sauvignon artfully achieves elegance with intensity. Dark wild berries, cocoa powder and a hint of licorice provide the aroma and flavor profile. Broad, full tannins create a velocity that drives the wine through its lengthy finish.
Bevan Ontogeny Propietary Red 2017
Bevan McGah Vineyard Cabernet Sauvignon 2014The McGah is the livelier of the two, with more vibrant flavors and a finish that seems to go on for minutes. I have opened them up side by side, three times and have yet to be able to pick out a favorite. Seductress or Minx? Refinement or hair pulling? It comes down to your mood and how you want to dance. Ballroom or disco?
Lail Blueprint Cabernet Sauvignon 2016Appearance: Deep ruby with purple edges. Aroma: Exotic of black cherry, plum, cassis and dark chocolate. Echoing the aromas, spicy flavors of blackberry, mint and boysenberry add further intrigue and complexity. Flavor: It is creamy, rich, lush and simply delicious.
Fiftyrow Alice Block Cabernet Sauvignon 2016Another 95 pt. plus vintage and the great fruit from the Alice Block has produced a 2016 Cabernet that is our best to date. It has the typical expression of the area and is instantly recognized with its distinctive Rutherford dust. Deep garnet in color with aromas of jammy blackberries and opulent dark plum while oak influences of nutmeg, cinnamon and clove round up the nose. The palate is supple, lush and voluptuous with flavors of black currant, tobacco, plum and dark chocolate, concluding with a lengthy, fruity finish
Sinegal Estate Cabernet Sauvignon 2017The 2017 Cabernet Sauvignon exhibits elegant aromas of ripe raspberry, plumb and black cherry, with notes of rose petal, cinnamon and all spice. The subtle oak spice tones are well integrated with the fruit and floral aromas in this wine. On the palate there is a silky texture with smooth tannins and long lingering finish. Flavors of candied cherries, and blackberry kirsch are intermixed with secondary notes of vanilla bean, mocha and coca nibs. The 2017 is showing well at a young age, however the wine has a nice tannin structure to age gracefully for the next 7-10 years.
Maybach Family Vineyards Materium 2016Aroma: The multifaceted aromatics suggest cigar box, boysenberry, tack-room and violet oil. Flavor: The completely saturating mouthfeel resonates with notes of black tea, brambly black fruit, allspice and crushed rock. The finely integrated tannins provide a pleasing structure for the lengthy finish, which fleshes out for nearly a minute after tasting. This wine possesses robust flavors, aromas and just the right amount of structure, allowing it to drink well now and age in the cellar over the next 10+ years.
Maybach Family Vineyards Amoenus 2016The aromas from this deep purple wine will command your attention even with the glass an arm's length away. The round, enveloping harmony of the aromas resonate with classic Napa Valley Cabernet Sauvignon highlights: dark fruit, exotic spice, aromatic wood, and ethereal floral notes. The palate experience is precise, layered and drawn out, well after consuming the first taste. Notes of crushed blackberries, clover oil, spearmint and cocoa nibs are expressed seamlessly in the glass. As with many exceptional creations, there is a quality that leaves you immediately wanting more, while also wanting to take time to reflect on the initial experience.
Scarlett Wines Cabernet Sauvignon 2016Unbelievable complexity and layers intermingle with aromas of berry compote, cassis with a black cherry core that jumps from the glass. The mid palate is a silky flow of abundant blue and black fruits, followed with an opulent, full-bodied mouthfeel. The integrated structure and polished tannins carry through to a detailed and long finish.
Cervantes Family Vineyards Cabernet Sauvignon 2016A blend of 76% Cabernet Sauvignon, 23% Cabernet Franc and 2% Petit Verdot, the deep garnet-purple colored 2016 MMXVI Cabernet Sauvignon gives up gregarious notions of warm red and black currants, black raspberries and warm plums with hints of chocolate mint, pencil shavings and tilled loam plus a waft of lilacs. Full-bodied, firm and grainy, the palate is built like a brick house with super ripe, super firm tannins and bags of bold, expressive, multifaceted fruit, finishing very long and mineral-laced. 545 cases were made. "The 2016 vintage in Napa Valley is being heralded as one of richness, density, and varietal purity. The second vintage from the hillsides of the Cervantes ranch blessed us with a growing season that was long, warm but relatively mild. These conditions allowed the grapes to fully mature with a noteworthy balance between tannin, acid, and aromatics. At the winery, the grapes were carefully sorted and delivered to the tanks without crushing. We fermented with careful attention to preserving aromas and freshness while extracting the right amount of tannin and building the mid-palate. The wines were drained and pressed to French oak barrels for 22 months of aging to further contour the mouthfeel of the wine and plait the many layers of flavor and texture. The resulting wine has an ever-growing list of aromas, from raspberry and sage to cardamom, orange peel, cedar, black licorice, and newly tanned leather. The longer the wine sits in the glass, the more layers are revealed. The wine’s brilliant red-purple hue hints at its dense fruit core, which is followed on the palate by a rush of baking spices, incense, orange oil, and completed by a mouthwatering, savory finish. It has “great bones,” a proper tannic scaffold to support the wine as it ages. While accessible now with a careful decanting, the 2016 Cervantes will continue its beautiful journey and gain complexity over many years to come" ...ANDY ERICKSON / WINEMAKER
Saxum Broken Stones 2017Our Broken Stones cuvee is Syrah based, with a large portion of Petite Sirah and Grenache and a splash of Mataro. It is aged for 18-20 months in mainly new, French barriques. It is full-bodied, rich, and intense, but also reveals great purity, focus and complexity. The Broken Stones is a multi-vineyard blend, utilizing all the vineyards that we source from. Our wines are never racked off their lees and are bottled unfined and unfiltered. Click here to download notes on previous releases of Broken Stones.
Saxum Terry Hoage Vineyard 2017I always have a soft spot for our Terry Hoage Vineyard. It is almost always the most approachable in our line up. A wine that you can enjoy while letting the others rest a bit. There's great spice from the Syrah but luscious red fruit from the Grenache. My favorite part might be the core of salinity that it displays. Maybe that doesn't sound like a tasty descriptor, but I find it fascinating and it begs you to take another sip to try and figure out where that vein is coming from.
Domaine de la Romanee Conti Corton 2016Surpassing the 2015 rendition, the 2016 Corton Grand Cru is the finest wine that the Domaine de la Romanée-Conti has produced to date from the holdings of Prince Florent de Mérode. Wafting from the glass with notes of cassis, currant leaf, raspberries, and menthol, discretely framed by new wood, the wine is medium to full-bodied, velvety and intense, gaining in-depth and dimension as it sits in the glass, with tangy underpinning acids and powdery tannins, culminating in a long finish. Aubert de Villaine recounted that the Domaine replanted a third of Corton-Bressandes while also grafting over the Mérodes' young vines to their own massal selections of Pinot Fin. While this is built for four decade's evolution in the cellar, the balance and concentration are such that it could be drunk with pleasure in its youth.
Domaine de la Romanee Conti Romanée St. Vivant 2016
Chateau-Margaux Margaux 2000It seemed that 2000 was setting a new benchmark in quality, never before attained, at least in terms of style. Throughout the barrel ageing time, these first impressions were gradually confirmed. The wine has now acquired a slightly tighter texture but has kept such a soft and especially long finish that it seems to go on forever.
Joseph Phelps Insignia 2016The 2016 Insignia is fresh and focused on entry with expressive cocoa powder, graphite and earthy spices. Elegant and complex with a supple, creamy texture and bold tannins, this latest vintage offers luscious ripe plum and blackberry character with hints of roasted coffee and dark cherry throughout the palate to a long, velvety finish. A normal period of bloom and veraison took place in early May and mid-July, respectively. The 2016 growing season was cooler compared to the previous three vintages, allowing for aromas and flavors to develop slowly in the red varieties yielding classic Cabernet Sauvignon from each of our vineyards. The Game of Thrones Whisky Collection Talisker Select Reserve House GreyjoyHouse Greyjoy rules the Iron Islands and worships the Drowned God. This liquid is an intense smoky single malt scotch with spicy, powerful and sweet elements combined with maritime flavors. Dry Sichuan peppery smoke and dark chocolate on the nose. The Cardhu Distillery was pioneered by Helen Cumming and her daughter-in-law Elizabeth during the 1800s, a time when the whisky industry was almost entirely male-dominated.
The Game of Thrones Whisky Collection Oban Bay Reserve The Night's WatchThe Oban distillery sits beneath the steep cliff that overlooks the bay in the frontier between the west Highlands and the Islands of Scotland, separating land and sea, just as Castle Black, home of The Night's Watch, sits between Westeros and the lands beyond The Wall. The liquid's richness is balanced with a woody, spicy dryness that The Night's Watch could enjoy even on the coldest of nights. Rich notes of cherry pie and candied orange peel open up on the palate that drifts into a wonderful crème caramel and a wisp of charred oak.
Johnnie Walker Game Of Thrones A Song Of Ice Blended Scotch WhiskeyJohnnie Walker A Song of Ice features single malts from Clynelish, one of Scotland's most northern distilleries, and exudes a crisp, clean taste like the unforgiving force of ice that shapes mountains and stops rivers. Domaine LaFage Bastide Miraflors 2017
Domaine LaFage Miraflors Rose 2019It’s always nice to find a delicious, light, juicy rosé outside of Provence. Sourced from Grenache Gris and Noir vines some nearing 80-years-old, together with a portion of younger Mourvèdre, this is made from early-picked grapes to ensure a fresher style and pressed without crushing for an incredibly pale hue. On the palate there’s delicate white peach, orange peel and strawberry flavours underpinned by crisp minerality.
Domaine LaFage Narassa 2017An 80-20 blend of Grenache and Syrah. Almost too good to be true, the 2017 Narassa is based on 82% Grenache and 18% Syrah, with the Grenache coming from the black slate soils of Maury and the Syrah from the higher elevation, sandy, granitic soils of Saint Martin de Fenouillet. Brought up all in used barrels, this full-bodied, deep, meaty Syrah reminds me a top California GSM blend and has a rocking nose of white pepper, black olives, cedarwood, and ample black fruits. At this quality, they could charge three to four times the price.

AIX Provance Rosé 2019AIX Rosé is made in the Provence region of France, just an hour East from the historical city of Aix-en-Provence. AIX was founded in 1880 with the first vines planted in 1973. The vineyard consists of 185 acres of vineyard and is one of the largest domaines in the famous AOP Coteaux d’Aix-en-Provence. These vineyards are non-irrigated and on a plateau at an elevation of 1,400 feet above sea level. The mistral winds keep the clusters dry and healthy. The soils vary from sandy, chalky soil to limestone and are highly acidic. AIX nurtures its heritage and has a passion and dedication to make the best Provence rosé. As part of this, all of their grapes are sustainably farmed. AIX Rosé is produced in the typical Provencial style using the direct pressing method. To avoid oxidation, the grapes are cold-soaked and chilled to 46 degrees Fahrenheit. The grape clusters are then destemmed before pressing and are macerated only at low temperatures for 5 to 6 hours. Fermentation is temperature-controlled in stainless steel tanks for 12 to 16 days at 57 degrees to keep the maximum fragility in the nose using monocepage fermentation. To get that beautiful pale pink color Provence Rosés are known for, AIX uses cold stabilization. They maintain the must in a closed tank for one week at around 35 degrees with the lees suspended with a neutral gas. The lees give a lot of aromas and a great body to the wine. The wine is then aged in a stainless steel tank for 2 to 3 weeks before bottling resulting in an AIX Rosé that is elegantly tasty and the perfect wine to drink all year long. TASTING NOTE : A fragrant and well-balanced wine, AIX's hypnotizing salmon pink color reveals a fruity freshness. The nose is delightfully fragrant with delicate balance and crisp acidity. Enjoy the notes of soft, ripe summer fruits particularly watermelon and strawberries. FOOD PAIRING : Salad, grilled fish, poultry, and Asian foods, especially sushi and curry dishes.
