VINEYARD: Selections of our most beautiful plots of Grenache Noir and Cinsault from the IGP Côtes de Thau classified terroir. Monitoring of maturity. Grapes harvested at night at maturity between 12.5° and 13.5°.
SOIL: The vines are located on clayey-limestone terraces, called Costières, dating from the Pliocene with a geological structure of red marl sand, gravel, molasses with limestone shells overlooking the Etang de Thau.
VINIFICATION: Direct pressing. Cold clarification for 48 hours at 8°C (46F). Maceration of the fine lees with low-temperature control enhances the intensity and aromatic complexity of this top-of-the-range rosé. Slow fermentation under a controlled temperature of 15° C (59F). Aged in vats.
TASTING NOTES: The robe is limpid of a beautiful light pink salmon. Lovely, very expressive, complex, and charming bouquet with intense notes of ripe citrus fruits (grapefruit, clementine) and candied red fruits (strawberries, redcurrants). The mouth is well balanced and delicate, developing aromas of red berries. It is a very aromatic, fresh, generous, and round wine with a full balance. It is provided with a beautiful aromatic persistence on red fruits and a long gustatory persistence particularly balanced between roundness and freshness.
