Fiordiligi is a beautiful Sicilian white, proposed by Assuli and already awarded by Italian and international wine critics. Grillo is 100% from the Mazara del Vallo area, this wine comes from grapes that have reached perfect ripeness thanks to the mild climate of the area, with mild winters and hot but windy summers. However, the harvest begins in the first weeks of September, when the most intense heat of the Sicilian summer is now a distant memory. Soft vinification in steel at controlled temperature, after racking the Fiordiligi matures for about 5 months "sur lies", i.e. in contact with its fine lees. This process, typical of the most important wines of Burgundy, gives the Sicilian Grillo an extra touch of elegance and complexity. Straw yellow with evident greenish reflections, on the nose this white wine reveals a strong citrus and fruity character that reaches the sweetness points typical of tropical fruit. The same picture is also in the mouth, where, however, fresh wine is discovered, with a perfect harmony of salinity and minerality. Excellent as an aperitif, it is perfect with fish-based first courses.
