This white Sancerre has aromas of gunflint and a spicy bouquet, powerful in fruit and body, reminiscent of Sauvignon flowers and vine sap. With an exemplary balance, finesse, and harmonious expression, it develops all its elegance as it matures in the bottle. Unrivaled as an accompaniment to noble products of the sea.
From 63-year-old Sauvignon Blanc vines planted on the famous flinted hills of Saint-Satur, on the eastern side of the Sancerre appellation. Vinified in temperature-regulated stainless steel tanks and aged for more than 6 months on the fine lees, with bâtonnage.
Light citrus aromas and mouth-filling ripe fruit nicely balanced by its refreshing acidity in its long finish. This promising, charming Sancerre should develop further in bottle. The 34ha Gérard Fiou domaine is based in St-Satur with its vineyards on the flinty slopes of this commune. Due to a lack of successors, the domaine was sold to the Famille Bourgeois in 2005. As with Domaine Laporte, the Bourgeois family decided to keep the domaine separate with its own winery rather than vinify in their winery at Chavignol.
