Producing world-class Chablis since 1815, Billaud-Simon seeks to produce a crisp, mineral style of Chablis with finesse, purity, and elegance. These wines are delicious when young, yet offer great aging potential – the benchmark high acidity is complimented by the richness of fruit, particularly in the Grand Crus which will typically improve in bottle for at least a decade. The Chablis wines of Domaine Billaud-Simon present sophistication, balance, and pure Chardonnay fruit, which prove to be superb examples of modern style Chablis. A seductive and very classic Chablis nose offering vine peach, banana, citrus fruits, and brioche. The palate is well-balanced, rich, fresh, and elegant. The smooth, rich structure lingers on the end palate while ripe fruits combine harmoniously with mineral notes to give a soft mouthfeel.

A slightly cooler and quite pretty nose speaks mostly of citrus and quinine along with whiffs of iodine. The delicious and more vibrant medium-weight flavors possess both good delineation and minerality while offering a more appealing texture on the bone-dry but not austere finish. This is a very good villages and worth considering.

Domaine grapes completed by purchases. Being fined ready to bottle before the harvest, mostly tank though a few barrels have crept in. Pale lemon yellow with a classical bouquet that shows a depth of fruit, lightly plummy, fine acidity, some lemon-scented notes around white fruit, and real weight behind. Very good.
